Does anyone else have a family that argues about what to call pasta sauce? If I hear one more fight over whether it’s sauce or gravy I will tear my hair out! Anyone else? No? Okay, it’s just my weird relatives. Either way, call it whatever you want, this sauce is the bomb. I literally can not have pasta sauce in a restaurant, because, blech. I’m spoiled. This recipes makes a TON of sauce, seriously. We freeze portions for future meals. Your house will smell sooooo good while it’s cooking all day!
We serve our pasta sauce with zucchini noodles which are amazingly pasta like, and take even less time to cook. I use this handy Julienne peeler to make the noodles then pop them in the microwave in a covered dish for 4-5 minutes to steam. (Just beware if you are left handed, this is a right handed tool! I know, I wish the World was made for us lefties too.) Try our meatball recipe with this sauce!

Paleo Italian Pasta Sauce

Ingredients
- 1 lb pork neck bones
- 3 lbs sausage (Italian, mild, hot, whatever you prefer!)
- 3 lbs meatballs
- 5 29 oz cans tomato sauce
- 1 15 oz can tomato paste
- 8 oz dry red wine
- 4 garlic cloves, minced
- 4 tablespoons oregano
- 4 tablespoons basil
- 2 tablespoons rosemary
- 2 tablespoons thyme
- 2 bay leaves
- olive oil
Instructions
- In large sauce pan, brown porkneck bones and garlic in olive oil (do not let garlic burn)
- Add tomato sauce and all spices
- Add sausage cut into 2 inch pieces
- Add red wine
- Add tomato paste
- Cook 6 hours on low stirring every 30 minutes or so, adding cooked meatballs in last 2 hours
- Do not eat Bay leaves! We leave them in the sauce as it’s served, in our family whoever gets the Bay leaves gets extra love!
