Crab Stuffed Avocados

Crab Stuffed AvocadoThe avocado has become a favorite in our household. Before eating Paleo, the avocado was reserved for guacamole, which is still made liberally here. Now we use them for topping everything from salads to burgers, we’ve made avocado fries, and our favorite side dish or quick lunch idea is stuffing them with yummy goodness. My personal preference is crab, or salsa which you can read here.

Avocados are on the list of super foods as they are densely packed with nutrients. They are high in fiber, and top the charts in fruits for folate, potassium, vitamin E, and magnesium. Each half of an avocado also contains about 2 grams of protein, and the monounsaturated fat in avocados is oleic acid, which may help lower cholesterol.

Kids love the stuffed avocados because it kind of hides the green that can throw them off sometimes. In our house we hear that they remind them of double stuffed potatoes.
