Do you remember the first time you ate and enjoyed green beans? I do. Does that make me weird? I was on a flight home from Paris, and believe it or not, the meal was amazing, and almost Paleo! It was a wonderful chicken, green beans, salad, and of course the infamous dinner roll. I admit, I ate it, all.
I grew up eating one “vegetable”. Corn. It wasn’t even a vegetable, but it was all I would eat. In our household, we had one spice. Mrs Dash. That was it. Then I married an Italian. My mind was blown! Garlic! Oregano! Basil! Curry! I still hate most plain steamed veggies, I need some spice. So do my kids.
Ever since those first green beans, I have been trying to recreate the flavor. I’ve come close. This is my favorite iteration so far, but I will keep trying until I figure out exactly how they were seasoned.

Garlic Green Beans

Ingredients
- 1 lb green beans
- 3 tablespoons olive oil
- 2 teaspoons oregano
- 2 teaspoons basil
- 3 tablespoons grated Parmesan cheese (optional)
Instructions
- Break or cut green beans into bite size pieces into skillet
- Add olive oil, spices, cheese and mix until beans are well coated
- Cook on low for 25-30 minutes
