Ingredients
- 2 large apples, peeled, cored, chopped
- 1/2 cup palm sugar, divided
- 2 teaspoons cinnamon, divided
- 4 tablespoons palm shortening
- 1/4 cup walnuts
- 1/4 cup hazelnuts
- 1/4 cup hulled pumpkin seeds
- 1/4 cup coconut flakes
- 1 tablespoon honey
Instructions
- Preheat oven to 350 degrees
- In a bowl mix the apples with 3 tablespoons palm sugar and 1 teaspoon of cinnamon until they are coated
- Arrange the apples in individual oven safe custard dishes
- Add all the nuts and coconut flakes to food processor and pulse 2-3 times
- In a bowl mix the nuts with remaining palm sugar and cinnamon
- Drizzle the honey over the nuts and mix
- Drop the tablespoons of palm shortening into the nuts separately and mix with a fork to break the shortening up, repeat until you can’t see the shortening
- Top the apples with the nuts
- Bake for 20-25 minutes
