Paleo French Toast




Paleo French ToastWhile breakfast time is not exactly my cup of tea, French Toast is my favorite all time breakfast food. If it’s after 11 am of course. We used to love heading to Perkins in the early afternoon, spending 5 mins trying to decide if I should get the 3 piece or the 5 piece. Even then I knew it was a huge splurge to eat that many grains, but it just tasted so delicious! After finding the perfect banana bread recipe I decided to try making the bread into French Toast as the shape and consistency reminded me of a serving I had at a hotel in Seattle.

Now I can barely keep any of this bread around, as soon as I make it, vultures appear in the form of teenagers. On the weekends I’ll make a double batch and then just throw them on a cookie sheet in the freezer so I can put them in a ziplock once they are frozen. Then we can just pull them out and heat them up for a wonderful, nutritious, guilt free breakfast!

  • 10 eggs (6 for the bread, 4 for making the french toast)
  • 1/3 cup honey
  • 1/3 cup olive oil
  • 1 tablespoon vanilla
  • 1 teaspoon baking soda
  • 1/2 cup coconut flour
  • 1 1/2 bananas


  1. Preheat oven to 350 degrees
  2. In a bowl combine 6 eggs, honey, olive oil, vanilla and baking soda, mix well
  3. Add coconut flour and mix until smooth
  4. Mash bananas and add them to the mixture, combine until smooth
  5. Grease a bread loaf pan and pour the mixture in
  6. Bake for 35 minutes or until a knife inserted into the middle comes out clean
  7. Once it’s cooled, slice the loaf into 1/2 inch slices and make french toast
