Paleo Mac and Cheese

Ingredients

  • Cauliflower head
  • 2 oz cream cheese
  • 1/4 cup coconut milk (or almond)
  • 2 1/2 cups shredded cheddar cheese (or mix and match your favorite cheeses)
  • 1 teaspoon dry mustard
  • 1 teaspoon turmeric

Instructions

  1. Preheat your oven to 375 degrees
  2. Chop the cauliflower into large chunks and steam for 10 minutes
  3. In an oven safe dish, mash the cauliflower with a potato masher until slightly chunky
  4. In a saucepan over medium heat bring the milk to a boil, lower heat to simmer
  5. Add the cream cheese in small chunks and mix until completely combined
  6. Add the shredded cheese one handful at a time, stir until melted and then repeat until all cheese is melted
  7. Add the dry mustard and turmeric and mix well
  8. Pour cheese over the cauliflower and mix until combined
  9. Bake for 25 minutes or until bubbly
