Paleo Taco Salad

We love Taco Tuesday at my house. Taco salads are one of my favorite meals for Taco Tuesday, because they are quick and easy, inexpensive, and use a lot of ingredients that I always have on hand in my fridge. And you can always take a little help from the store if you’re running tight on time by purchasing ready made fresh pico de gallo, guacamole, and shredded lettuce. Just be sure to check ingredients when buying anything pre-made.

Homemade taco seasoning is so easy to make at home. The prepackaged seasoning often times is loaded with salt, so I prefer to make my own in order to control the ingredients. This seasoning couldn’t be easier, simply mix all the ingredients together in a small bowl and you are good to go.

I served this salad with plantain chips from the store. These are a Paleo splurge we like for dipping in guacamole, salsa, and for added crunch in our salads.

*Seasoning is a little spicy, so if you are not a fan of spice simply reduce or eliminate the crushed red pepper flake.

Time Saving Tip: double or triple the ingredients and save in spice jar for future use.

Ingredients

  • 1 head iceberg lettuce, thinly sliced
  • 1 lb. ground beef
  • 1 lb. beef sausage links
  • ½ yellow onion, diced
  • ¼½ cup water
  • 2 tbsp. Taco Seasoning, see recipe below.
  • Pico de Gallo, fresh or store bought
  • Guacamole, fresh or store bought
  • TACO SEASONING INGREDIENTS
  • 1 tbsp. chili powder
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
  • ½ tsp. paprika
  • ¼ tsp. oregano
  • ¼ tsp. crushed red pepper flake
  • 1 tsp. black pepper
  • 1 tsp. sea salt
  • 1 ½ tsp. ground cumin

Instructions

  1. Brown ground beef in skillet. Drain.
  2. Dice onion and sauté until translucent. Add to ground beef.
  3. Dice beef sausage and brown in skillet. Drain and add to ground beef/onion mix.
  4. With heat on medium-high, add 2 tbsp. taco seasoning and ¼- ½ cup water to the ground beef/onion/sausage mix and bring to a boil.
  5. Once boiling, reduce heat to medium and cover. Simmer for 5-7 minutes until thickened.
  6. Wash and chop iceberg lettuce. Prepare pico de gallo and guacamole, if not taking help from the store. Now you’re ready to assemble the salads.
