Sausage and Sweet Potato Frittata




Breakfast is a hard meal for me, mostly because mornings should just not exist. I would love to cook a healthy, warm meal for my kids every morning, if it happened around 11 am. As they get older, school just gets earlier, and well, I’m a total slacker. Which is why I try to find the easiest breakfasts that I can prepare ahead of time and they can just heat up. I feel better about myself as a Mom, the kids think I rock, and I know they are getting something much healthier than grains and sugar in a box. I’ve always hated cereal anyway, maybe that’s why I never liked mornings?

This Frittata is great because you can cook it the night before, cut it into little pie slices and they can throw it in the microwave or reheat it in the oven in the morning! Which means I can still be sleeping!

Sausage and Sweet Potato Frittata

  • 1 lb Italian sausage (mild, hot, sweet, whatever you prefer)
  • 1 sweet potato, grated
  • 10 eggs
  • 2 tablespoons Coconut or olive oil
  • 1 teaspoon Oregano


  1. Turn broiler on low
  2. Using an oven proof skillet, brown your sausage in the oil
  3. Add your sweet potatoes and cook until they are soft
  4. Whisk eggs in a bowl with oregano and pour over sausage and potatoes
  5. Cook on the stovetop until you see the edges are almost done
  6. Transfer to the oven and cook all the way through, about 5-7 minutes
