Breakfast is a hard meal for me, mostly because mornings should just not exist. I would love to cook a healthy, warm meal for my kids every morning, if it happened around 11 am. As they get older, school just gets earlier, and well, I’m a total slacker. Which is why I try to find the easiest breakfasts that I can prepare ahead of time and they can just heat up. I feel better about myself as a Mom, the kids think I rock, and I know they are getting something much healthier than grains and sugar in a box. I’ve always hated cereal anyway, maybe that’s why I never liked mornings?
This Frittata is great because you can cook it the night before, cut it into little pie slices and they can throw it in the microwave or reheat it in the oven in the morning! Which means I can still be sleeping!Print
