I’m just keeping it real right? I swear I have anxiety attacks when I look at Paleo food blogs, because seriously, are these people professional photographers? Do they have a photographer following them around every where they go? Arranging their food on perfect backdrops? Frankly, I’m lucky I get a photo of what we make before three teenage boys push me over to get at their food.

Okay, so this creation came about mostly because we already had sausages out and I was craving a sweet potato. We had to do the sweet potatoes in the microwave because everyone was starving, and I’m shocked they turned out as well as they did. I never trust potatoes in the microwave, they either aren’t done in the middle or the outside is dry as a bone. The combination of the sweetness from the potato and the saltiness from the sausage was amazing.

Sausage Stuffed Sweet Potatoes

  • 4 sweet potatoes
  • 4 sausage links or brats
  • Butter
  • Cinnamon


  1. Heat your potatoes in the microwave, 4 minutes for one potato plus 3 minutes for each additional potato if you cook them all together, or bake them in the oven on 350 for an hour
  2. Remove sausage from it’s casing and fry in skillet until done (or cheat and do chunks like us!)
  3. Cut potatoes in half, rub with butter and sprinkle with cinnamon
  4. Top with sausage, and enjoy!
